1. Project Creation:

Navigate to the HACCP Command Center and click "New Project." Select your ISO 22003-1 Food Chain Category (e.g., C1 for Perishable Animal Products). This selection calibrates the AI Smart Engine for your specific industry.

Flow Diagram Builder:

Use the visual drag-and-drop interface to map your production line.

Raw Materials: Green nodes.

Process Steps: Blue nodes.

Rework/Waste: Orange nodes.

Important: You must connect the nodes in chronological order. The Hazard Matrix cannot be auto-generated until the flow diagram is complete.

2. The Smart Hazard Matrix

Auto-Populate:

Click the "Auto-Generate Baseline Matrix" button. The system will cross-reference your process steps with our 5,000+ row database to suggest known biological, chemical, physical, and allergenic hazards.

Manual Entry:

To add a custom hazard, click "Add Hazard." Select the step and hazard type. The Smart Engine will provide a dropdown of legally defined acceptable levels (e.g., Reg. EC 2073/2005 limits).

Risk Scoring:

Assign a Likelihood (1-5) and Severity (1-5). Any score of 10 or higher is automatically flagged in RED as a Significant Hazard requiring a CCP or OPRP.

3. Control Measures & Final Reporting

Assigning Controls:

For every significant hazard, you must define the Critical Limit, Monitoring Procedure, and Responsibility (e.g., QA Manager).

Generating the Report:

Click "Generate Official PDF." If any CAPA (Corrective Action) is marked as "Open," the system will legally reject the report and stamp it with a red banner. You must resolve all CAPAs in the portal to achieve "Approved" status.
